Soft Pretzel Rolls






INGREDIENTS


3 tsp yeast

1 C warm water

1 tsp sugar


2 1/2 C flour

1/2 tsp kosher salt


TOPPING

1/2 C warm water

1 Tbsp baking soda

vegetable oil

corse sea salt

3 Tbsp butter, melted


METHOD

Mix yeast, sugar and warm water in a mixer bowl. Let rise until foamy. Add salt and flour and mix with dough hook for 5 minutes. It should be smooth and soft. Cover and let rise for 30 minutes.

Preheat oven to 450°. Grease a baking sheet with vegetable oil or use parchment paper on bottom of pan. Cut dough into 12 even pieces. Squeeze and roll each piece into a rope and twist into pretzel shape. Place on baking sheet.

Mix warm water and baking soda and cook in microwave for one minute (it won't dissolve all the way). Brush on pretzels and sprinkle with sea salt. Bake for 10 minutes until golden brown. Immediately brush with melted butter and eat while still warm.
